Porchetta.  The legendary Italian roast Pork.  Infallibly succulent and delicately flavoured with fennel and other herbs. It’s a long process but well worth it. We served Porchetta at our wedding, and the plaster pig, so familiar to many alumni, played a key role as one of the centrepieces.
